Southern USA Creole smoky flavours with plenty of heat make this spice a favourite for meat rubs and chicken. The chilli is subtle rather than over-powering and goes well with a breadcrumb coating for lamb cutlets. Make into a paste for fish, mix into a mayonnaise or use within a dressing.
