Poultry is mainly used to make this rich, spicy and aromatic curry that originates in Sumatra, but it can also be used with fish or vegetables. other variations exist for lamb or beef. Potato can be included in the dish then finish off the curry with coconut milk and finely chopped shallots, serving with steamed rice or Roti.
